Bajra and Gond Laddoo, One a Day in Winter

Roasted bajra flour and fried gond bound with jaggery and ghee, one small laddoo in cold months. Sweet and rich, so one is the limit.

A winter laddoo, kept to one

Bajra gond laddoo is a traditional winter sweet in Rajasthan and Gujarat, made with roasted bajra flour, fried edible gum, jaggery and ghee. It is warming and filling and usually eaten in the cold months. It is rich food and a tradition, not an immunity medicine.

One small laddoo is the serving, ideally in the morning. Skip it in warm weather. If you manage blood sugar, weight, cholesterol or have digestion trouble with heavy food, ask your doctor or skip it. Make the laddoo fresh and store it in an airtight tin for a couple of weeks.

Ingredients

  • 1 cup bajra flour and 2 tablespoons edible gum (gond)
  • 4 tablespoons ghee
  • Half a cup grated jaggery and a pinch of cardamom

How to prepare

  1. Fry the gond in hot ghee until it puffs, cool and crush it.
  2. Roast the bajra flour in ghee, mix in the gond, cardamom and jaggery off the heat, and roll into small laddoos.

How to use

  • Eat one small laddoo in the morning in the cold months.
  • Do not eat more than one a day.

  • Let the flour cool slightly before adding jaggery so it binds without melting.
