A Small Glass of Fresh Rice Kanji

A small glass of the thin liquid from rice you have just cooked, with a pinch of salt. Drink it fresh. It is not a sour ferment left overnight, and it is not a cleanse.

Fresh starch water, thrown out if it sours

When you cook rice a little softer than usual, a thin cloudy liquid remains. Strain a small glass, add a pinch of salt if you want, and sip it the same day while it is still fresh. This is kanji as a fresh drink. It is not the fermented rice water that sits out and turns sour. Do not leave it overnight on the counter.

If it smells sour, fizzy, or stale, throw it away. It does not treat dehydration, diarrhoea, or fever. Those need a doctor's advice, and diarrhoea may need oral rehydration, not starch water. One small glass is enough. It is not a reason to skip a meal.
