Gajar Halwa with Less Sugar and a Spoon of Milk Solids

A winter treat, made lighter
Gajar halwa is a winter favourite, but the usual recipe uses a lot of sugar and ghee. Cooking grated carrots in milk until they sweeten naturally lets you use far less sugar and ghee.
Cook on low heat, stirring, add cardamom and a few nuts, and serve a small bowl warm. This is a lighter sweet and not a health food or treatment.
Ingredients
- 500 g grated carrot
- 1½ cups milk
- 2 tbsp jaggery or sugar
- 1 tbsp ghee
- Cardamom, pistachio
How to prepare
- Cook carrot in milk on low heat until nearly dry.
- Stir in ghee, jaggery and cardamom and cook a few minutes more.
How to use
- Eat one small bowl after lunch.
- Top with a few slivered nuts.
