Garlic, Ginger and Turmeric Vegetable Soup
A light vegetable soup with plenty of garlic, ginger and turmeric, for cold evenings and the days after a cold.

What to know about garlic
Lahsun (garlic) is pungent and warming. In food it adds flavour and some studies link regular garlic with modest heart benefits; raw garlic can be harsh on the stomach.
A warm, garlicky soup is easy to digest, hydrating and comforting when appetite is low. Add whatever vegetables you have and a handful of moong dal for protein.
Ingredients
- 4 garlic cloves
- 1-inch ginger
- ½ tsp turmeric
- 2 cups mixed vegetables
- 2 tbsp moong dal
- 1 tsp ghee
- Salt and black pepper
How to prepare
- Sauté crushed garlic and ginger in ghee for a minute; add turmeric.
- Add vegetables, dal and four cups water; cook until soft.
- Mash lightly and season with salt and pepper.
How to use
- Have a bowl as an early, light dinner.
- Squeeze lemon on top.

- Crush and rest garlic for 10 minutes before cooking to keep more of its compounds.
